This is a blend of hard-bean coffees that can endure the aggressive heat of a French Roast and yet maintain the bean's intrinsic flavor notes and satisfying body. Some roasters use the cheapest beans they can buy to make a French Roast. They figure the roast is so dark nobody can tell the difference. Well, in the first place, we don't buy any cheap green beans, and in the second place, we can tell. At this time, we're blending a Mexican Chiapas and a Guatemalan.
